CHOCOLATE CURLS

The Crumbly and flaky curls jazz up chocolate sundaes, make a masterpiece of a pavlova or black forest gateau or simply melt beautifully into steaming mugs of creamy milk.


WHITE
CHOCOLATE BUTTONS

The white chocolate buttons are gloriously creamy and smooth, made from milk, sugar and the best cocoa butter. White chocolate gets bad press, but by gum it’s a great ingredient. Fabulously unctious in mousses, ganaches and petits pots.

The beautifully bitter 72% cocoa chunks deserve an altogether different treatment. They tantalise when coating sweet hand-rolled truffles and shine having coated delicately dipped candied citrus peel.

My milk chocolate has great character, with 38% cocoa solids mixed with loads smooth cocoa butter and milk. Wonderful with salted caramel, roasted almonds and in cool trios with its paler and darker cousins.
