At last it is recognized as the wonderful ingredient it is, mostly thanks to the rise of salted caramel, it has to be said. But I don't want it sticky and sweet like the chocolate of my childhood, that's why this one has a good dose of cocoa solids, and is made with beans full of character. The milk is there to give us the smooth texture we know and love, but yet does not stifle the distinct chocolate aromas that sit so well in milk ganache, mousse and chocolate sauce.
